Valentine Snickerdoodles

These cookies are incredibly fun, and so easy to make! They get that special snickerdoodle tang from a little bit of cream of tartar, but instead of rolling them in cinnamon sugar, I added some fun Valentines sprinkles. I highly suggest using jimmy style sprinkles in your batch. I used some larger non-peril sprinkles and they didn’t soften in the oven like I hoped. Otherwise, this is a great recipe that your friends and kids will love!

Ingredients

  • 2 1/2 cups all purpose flour

  • 2 tsp cream of tartar

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 8 Tbsp unsalted butter, softened

  • 8 Tbsp shortening

  • 1 1/2 cups sugar

  • 2 large eggs

  • 4 Tbsp sprinkles of your choice

Instructions

  1. Preheat your oven to 375 degrees and place your oven rack in the middle position.

  2. Whisk flour, cream of tartar, baking soda, and salt in a small bowl and set aside.

  3. Using a stand mixer fitted with the paddle attachment, beat the butter, shortening, and sugar on medium speed until light and fluffy, about 2 minutes. 

  4. Add the eggs, one at a time, on medium speed until fully incorporated. 

  5. Reduce speed to low and slowly add the flour mixture until just combined. 

  6. Add the sprinkles and mix on low or stir by hand to ensure no flour pockets remain. 

  7. Using a size 3 cookie scoop (or 2 heaping Tbsp) place cookies on a baking sheet lined with parchment paper. Be sure not to crowd the cookies, they will spread. 

  8. Bake in the oven, one sheet at a time, for 8 minutes. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
